Simply delicious and highly nutritious, this is the quickest and easiest preparation you'll find for a deeply rich, cravingly addictive, freshly homemade garlicky dressing.
With your choice of hard Italian cheeses and capers supplying enough saltiness, no extra sodium is needed. Toss with a colourful selection of vegetables, freshly toasted croutons and any protein, and you've created a complete meal. Some protein ideas include beans, chickpeas, tofu, tempeh, quinoa, fish, eggs, chicken, ham/pork, and beef.
And always remember – the fresher the produce and the higher quality ingredients, the healthier and far more flavourful creation for hunger-satisfying meals!!

Equipment

  • 1 Smoothie mixer or multi-chop blender (immersion blender or mini food processor also work – see Notes)
  • 1 Silicone scraping spatula
  • 1 Serving/storage bottle/jar/bowl/cannister (any preferred container, preferably glass – see Notes)

Ingredients
  

  • ½ cup Hard Cheese (freshly ground or small chips off the block) Parmesan, Pecorino, or Grand Padano
  • 5+ cloves Garlic (roughly quartered) (the fresher…the sharper…the tastier!)
  • tsp Capers
  • tsp Worcestershire Sauce (add more to preferred taste)
  • 3 tsp Dijon Mustard (add more to preferred taste)
  • 2-4 Tbsp Lime or Lemon Juice (freshly squeezed) (or roughly cut skinned portion – see Notes)
  • 2 tsp Balsamic Vinegar (add more to preferred taste)
  • 1.5 Tbsp Dried Whole Egg Powder (see Notes)
  • ½ tsp Black Pepper (freshly ground)
  • ¾+ cup Extra Virgin Olive Oil (add more to preferred consistency)
  • Tbsp Water (cold) (add more to preferred fluidity and silkiness)

Instructions
 

INTO THE BLENDER:

  • Add all ingredients.
  • Pulse blend to a smooth consistency.
  • Taste.
  • Tweak and customize by adding more of the ingredients or liquids to desired taste and liquidity.
  • Pour into preferred serving container(s)*. Ready to serve!! Or refrigerate for use within next 10 days.
  • Important Note: Immediately wash containers and equipment with hot, soapy water to avoid your next smoothie tasting super funky! Cleaning tip – immediately rinse the blender, refill half-way with hot water, add a drip of soap, and blend. This removes a lot of the oil but a good soapy wash is still needed to get it spanking clean again!

Notes

  • Multi-tool system – so much utility in these things, it’ll be your favourite go-to appliance.
  • * Glass storage – lots of options for storage containers but glass is your best bet to completely avoid any BPAs, residue, acidic-burned plastic, and flavour transfers.
  • Sliced fresh lime/lemon – since the dressing is pulverized, the easiest way to utilize all the healthy yumminess from fresh limes and lemons is to slice off the rind and pith, remove all seeds, and throw the pulpy remains in the blender.  About 1/8 cup to 1/4 cup of lime/lemon should suffice, depending on preferred citrus level. Zest is optional but is great for a deeper citrus touch.
  • Dried egg powder – purchased in various sizes, buy a small amount first if you haven’t tried before as dried egg powder can get pricey!  Alternatively, for even richer goodness, go back to basics and add 2-3 pasteurized egg yolks.
